Here it is, REALLY simplified: :)
- ProDOS 16 was based on ProDOS 8; GS/OS is completely 16-bit.
- GS/OS has more tools, and a better Finder.
- GS/OS is *much* faster.
- GS/OS is filesystem-independent;  P16 can only use ProDOS disks, while GS/
OS can use any filesystem for which there is an FST. (filesystem translator)
- GS/OS supports forked files (data & resource forks) like the...er...Mac :<
- GS/OS runs correctly on the ROM 03.

If anyone would like to elaborate, be my guest!  This is a very brief list 
of the many improvements GS/OS holds over P16.

In a nutshell, GS/OS is a real operating system, while ProDOS 16 is just a 
hack that Apple made to get the GS out as quickly as possible.
