In software, the Apple does support two joysticks plugged in at the
same time. Two joysticks can even been read from a simple Applesoft
BASIC program. And, there were games that could use two joysticks.

The problem, however, is in actually plugging two joysticks into the
Apple at the same time. There is a single sixteen pin din (game port)
with inputs for two joysticks, but usually the case is that only a
single joystick will plug in at one time. Some rewiring is required
to accommodate two joysticks. I had an adapter that plugged into the
game port din of the apple and provided 6 din plugs with various
combinations to plug in two joysticks.
As, noted there are only three push buttons in total. These can also
be pressed from keys on many keyboards.
PB#0, first button, open apple (the precursor to the Apple command key
or Windows key)
PB#1, second button, closed apple (the postcursor to the option key or
PC Alt key)
PB#2, third button, can be the shift key (modification)
