If I had to gather up these parts, I'd just head over to Fry's.  Newegg
should also have most of this stuff, as most of it is fairly standard and
widely available.

The exception appears to be the cable that'll plug into the IIGS...nobody
uses dial-up anymore, so they're not much call for cables to connect a modem
to a computer.  I was able to find this:

If you're handy with a soldering iron, you could just make a cable with a
mini-DIN-8 connector on one end and a DB-9 connector on the other end, wired
in a null-modem configuration:

Plug that into a USB-to-serial dongle (available nearly everywhere) and
you're good to go.
