I would not assume that Wayout is simpler. You have to do some non-obvious
things to run as fast as it did. Wolf 3D uses lots of sleazy tricks to
get speed -- it's not drawing texture-mapped polygons.
On the IIgs you can also look at Mazer ][, Modulae, or even the Polygonia
demo, to see an example of solid 3D using the IIgs "fill mode". Yet
another way to cheat.

There is a "thief" that will steal your map and compass. It looks like
a big blinking square, because that's about all it can draw.
Another approach: Epoch/Hadron, which use scaled blocks. The original
Wing Commander for the PC did its 3D in a similar way (scaled/rotated
bitmaps).
