An approach that divides the labor in a potentially useful way is
to use an (advanced?) copy machine to make single-sided copies of
the book to be scanned, then sheet-feed the copies to the scanner.

Another approach that could speed things up a great deal would be
to use a digital camera to photograph the pages, possibly 2-up.
Virtually all digital cameras offer a macro mode for close-up
focus, and zoom to fill the frame with a simple setup.

You could even put the camera under a glass-top table, light
below from 2 sides, and put the open book face down on the
table.  This ought to produce relatively high quality "scans"
very quickly.
