    I assume we're talking about 8-bit games for the Apple II+/e/c/c+.
In that case, I'd probably have to say Wings of Fury. It's like a cross
between an arcade game and flight simulator, and great fun! I still
pull out the 5.25 from time to time to play on my real Apple II's.

    Someone wrote a modernized (freeware) version for the PC recently, 
in the last year or two, though I found it terrible to be honest.
