I built a RGB monitor cable out of ribbon cable and used it for about 4
years back in the mid 90's.  I never had a visible impedance problem
although the cable was relatively short (about 14 inches).  15 pin IDC
ribbon cable connectors are $1.55/ea in the Jameco cataloge.  No tricky
wiring either.

Note: I only used it with my AE ColorLink expansion on my Ramworks III
hooked up to a GS monitor.  It should perform similarly on a GS.
