Impedance matching of video cables is an issue only from the point
of view of reducing signal reflections.
Since the highest dot rate is about 14MHz, corresponding to a period of
70ns, and 70ns delay would be about 35 feet of cable, it is unlikely
that any cable less than 10 feet long would have _any_ impedance
problem with Apple II video.
Of course, RFI (either direction) is another issue, so shielding
(even the imperfect shielding of a twisted pair) is a good thing.
