Shrinkit's an interesting exception. I never tried formatting with it largely because most programs will use a 4:1 interleave when formatting. I usually use an accelerated IIe and prefer a 2:1 interleave. Things might be different with an unaccelerated IIe. With the Superdrive card interleave doesn't matter for reading but it makes quite a bit of difference for writing.
Some versions of ProDOS won't work with the 6502 which is found in the II, II+ and unenhanced IIe. If you replace the 6502 with a suitable 65C02 or 65802 then they all work.
