You can do both.  There are probably other dual booting methods, but you
could certainly attach an external hard disk, install a couple of ProDos
partitions and a Mac OS partition, install 7.5.5 or similar, and use the
Startup control panel to make the external drive the boot disk when you want
to use your IIe card.
