Well, most of the time I am running 8.1 from my external 4GB SCSI hard
drive. When I feel like booting up my LC IIe card, I simply reboot into
7.1 from my internal 160 megabyte drive, turn off 32 bit addressing via
the Memory Control Panel, reboot once again, and viola, I can fully use
the internal IIe emulation card with no trouble at all. I even have an
external Apple 5.25" floppy drive and an Apple IIe joystick (crummy Archer
brand from Radio Shack) hooked up to my 68040 based Mac LC475. Playing
Atarisoft Donkey Kong for the Apple ][ on my Macintosh is fun.

"Can't" and "Won't" are two different things.  :)
