An Apple II card can work in a ///, IF you have an SOS driver for the card.

So, with a driver, a II card will work in a ///, but a /// card won't work in a II.

If you can't use a card in both models, I'm wondering if it's possible that
Bill's SCSI card "looks" like the photo, but is a different model. The photo
is definitely a card made for an Apple II, and I would've sworn it's a SASI
card (my Sider's card is exactly the same, right down to the label on the
ROM).

Yes, that is my card.
Is there some documentation about it online?
Probably it's of no use until I find a SASI hard disk? Or can I use
SCSI drives?
