I did precisely that a few years ago. I used an Applied Engineering A/D D/A
card with various sensors. It monitored wind speed, inside and outside
temperatures, controlled the furnace and kept track of high and low
temperatures. It also kept track of the furnace run time. Somewhere I have the
program. I wrote it in Applesoft Basic.
It displayed data using bar graphs on the 80 column screen.
What little documentation there is, is in rem statements. If you want to look
at the code I'll find the program for you.
