The only problem I've had with my IIgs is, I think, down to the PSU. I've got a Transwarp and a RAM 4 GS, in addition to an AE Audio Animator and RamFast Rev. D.
Cold boot, the machine locks up on the initial text; power off and on (keyboard reset doesn't help) and it boots up and runs all day happily.
I get the odd bug, but I really doubt they're due to RAM. Music Studio crashes on me at startup, and DNS resolution doesn't work (I wait patiently for a Marinetti compatible direct Ethernet interface - or a GatorBox).
