If the Eprom is mapped to the Apple II slot, you should be able to:

1)put it in slot 7
2)boot to basic prompt
3)type CALL-151 (enter machine language monitor)
4)type C700L (list the code at C700, which would be on the card in slot
7)
5)you should see the code on screen

from the basic prompt, type BSAVE EPROMDUMP,a$c700,L256

But I'm guessing that it's at least a 2KB EPROM, so the expansion
space would also be of interest.

To capture that is a little trickier, since I/O will switch the
expansion ROM space off.  It has to be copied into RAM before
viewing or saving it.

BTW, unless it was left outside in the sun, or under a fluorescent
light for months, the lack of a window covering for the EPROM
is almost certainly not an issue.  It'll be fine.
