David L. Vernier (used to) produce a book called "HOW TO BUILD A BETTER
MOUSETRAP and 13 Other Science Projects Using The Apple II" ($25) They
also sold short-form kits at reasonable prices.

Project #1 is a Photogate timer exactly as you describe and includes Timer
software and a BASIC program you can modify to LOG the data to a DOS 3.3
text file.

The Book is huge and includes part lists, circuit diagrams, drawings,
sketches, photographs, software and source code and is suitable for 7-12th
grade physics/general science students and teachers.

All use the Apple II game port on Apple II, II+, IIe and IIgs rather than
complicated slot-based solutions. 

Since some projects use the STROBE, they are not suitable for the Apple
IIc game port, others can be modified and adapted using a simple hardware
and/or software modification explained in the book.

This is a good book I heartily recommend. You will probably learn more
than your students!
