The Apple IIgs Hardware Reference (either edition) appears to have
enough information to build an ADB device.
The Macintosh Family Hardware Reference has the same information (in
the chapters on the Mac SE and Mac II).
An interesting point: the Mac reference says that Apple owns patents
on ADB and you have to get a license from them to build any ADB
devices. I cannot see any mention of this in the IIgs reference.
Which details do you need? There aren't many timing parameters that
you need to know, if you have basic information about the packet
formats, addressing, registers, etc.
